Wineing Butcher
Is it me or have the prices of steak tips gone through the roof there. It's not fillet people. There seems to be less of a selection at both stores as well. I know prices are always on the rise but $13.99 a pound?

Yup, we picked some up last weekend too. They were very good for sure, but the $13.99/lb sure did leave a bitter aftertaste. :laugh:
You can buy a quality strip steak, ribeye or even porterhouse for less than that. We prefer to buy flap meat fresh and cut it to size ourselves. You can get it in quantity at BJ's in Tilton. My wife makes a great marinade, but when we don't have a lot of time, we use Lawry's teriyaki marinade with pineapple juice. It's as good as most mainades at the butcher shops. And of course, you realize that they get the $13.99/lb for the marinade too!! |

Just my opinion on a great marinade. Try "Soy Vay" marinade on your meats. Outstanding and available most everywhere.

I second soy vay. My MIL broils steak tips marinated overnight in that and it always comes out AWESOME.

We love their steak tips...
Love their steak tips. Just had them about a month ago. At about a 1/2 pound per person, the 4 of us can eat for $30 ish. Compare this to going to the Canoe. We just went there a couple weeks ago, and I thought they were VERY pricey, (in excess of $30 for a steak or prime rib...cant remember which one), and service was marginal. $30 for beef in Center Harbor, NH??? Really??
Of course, going out to dinner anywhere is more costly than eating at home, but bottom line is that I think WB's quality and flavor of meat is great, even at $13 / pound. |
Costs a bit to run a store . . .
$3.99 - $8.99 Regional prices. I used to pick up a pound instead of going out to eat, as it was cheaper. Not so much, even though there are leftovers. For 10 extra dollars. I'll be served and still have left overs. And their tips are inconsistent. I can have a great one, and the hubs usually ends up with the chewy one.

there is a reason
Hello all. Spoke with a friend who works for Pineland farms. While he cannot directly speak to national beef companies he does have some insight. Most suppliers have had wholesale prices to retailers, move from mid 7's to nearly 10 a pound in the last few weeks alone. The reasons are multiple and mostly political. I'm not going there so you can do you own research. Suggest you start 10 years ago with ethanol and keep chasing from there. That being said our visits to butcher shops in Gilford, Alton, and New Durham have yielded similar results, so my thoughts are the local guys have no control, and are not raising prices to tick people off. I agree that denuded flap meat isn't worth half of what the ranches are selling it for. Soon we'll all have a few cows in our backyard at this rate!

in the end they are in the business to make a profit. If cost go up they raise prices until not enough people buy their product . At that price I would pass but if enough are willing to pay that's fantastic

We like the butcher section at Hannaford's in Gilford. Stan is great and always cuts the meat exactly as we request it.

We just picked up three packages of maple bourbon steak tips from McKinnon's at $10.49 per pound. While we have always liked the Wineing Butcher, we have found their steak tips vary in thickness whereas McKinnon's are much more uniform in size. When grilling WB steak tips often the center is done to my liking (medium rare), but an end may be much thinner and is well done.

We often get the Key West chicken which we really like. We also like the steak house tips, expensive yes but very good.
One thing that I like about the WB is consistency. If we have unexpected company we can get the items that we like and be assured of the same product. |

I stopped at the Wineing Butchers new shop in Pembroke next to Veanos.. Tips are $14.99 a pound there. I declined and left.

Who are the owners of WB now if they have moved to VA? I remember when either Andrew or Gretchen where serving the customers at their original location. Not that long ago!

they're new partners. This was when they were vamping up the Meredith location and thinking of expanding further.
I think the customer service is still great in Gilford. Wished they had more almost table ready food in the winter. Years past they had. This past Mother's day I was all prepared to bring lasagna and chicken parm down south . . . they had nothing but tips and chicken to offer. I had to go to The Prime Butcher in Hampstead, and know that their meat didn't even compare to TWB. So alas, I'll continue to be thankful they're right around the corner even if I'll need to drive to Meredith in the winter. Note: I still think the price of tips is outrageous. Quote:

We were going there every weekend last year but the costs are just so high. So now we just marinade our own and it's just as good and a lot cheaper. If you have to get them already marinated the Hannafords marinated choices are pretty good and definitely cheaper...

I get my tips from a friend in the catering/restaurant business. Currently we pay $7.50/lb for stuff that blows grocery store meats away. We buy 30-40 lbs at a whack and split it up among a few people.
I used to love the firehouse steak tips from the Wine'ing Butcher. I wish I could get that marinade recipe! |

I did the same, Hannaford's Tips Yo****a marinade and they were great and tender! @14.99LB marinated plus the weight of the marinade, that's wrong!

I think the owners of the Wineing Butcher may soon be Wneing themselves when they lose customers due to very high prices.

Bought tips Memorial weekend at Hannafords in Meredith I believe they were around 7.99/lb They were very tender and tasty everyone who tried them loved them.

I used to love WB, but prices are just not worth the value. The ONLY butcher shop worthy of charging those prices is Dom's. There is zero comparison to their signature steak tips. However, I branched out recently and had their Hawaiian Cowboy tips and they were UNREAL. I won't go into detail, but if you know Dom's then there really isn't a debate.
Needless to say, WB will likely feel the kickback. |

What the market will pay
I love the Wineing Butcher but their current price structure is way out of line with the current market price. I consider their product to be a premium product and I"m willing to pay a little more for it. But numerous posters here have expressed great recent satisfaction with tips that they purchased locally for $6.99 to $8.99 a pound. Few in their right mind are going to pay double the going price no matter how good it is!
For what it's worth the online price of Wineing Butcher tips is 2 x 1 lb packages for $23.98. This puts the cost at $11.99 per pound. Why do they expect customers to pay an extra $3.00 per pound for the honor of picking it up fresh and at the store? It makes no sense as the labor and associated costs involved to package and ship this product far exceed those of handing it to a customer fresh from the case. As a business person you always want to and are entitled to a fair profit. When you decide your margins need to be substantially greater than your competition it is a step on the road to business failure. I hope that doesn't happen here as the people who started the business are good folks. I'm not sure what their current interest is in the NH Stores. . |

I tried to place an online order to get all the exact shipping cost info but their site won't allow you to complete an order to the point of determining shipping charges without adding bank account info or CCD info.
For what it's worth their E com site does not have a SSL certificate and is not secure. I couldn't even access it from my network managed computer at work as the security setting block non SSL sites. I connected with a personal laptop in an attempt to validate my info. Again some poor business practices by having a non secure website. I"m surprised because Andrew and Gretchen are smart enough to know better than that! This makes me further wonder who is operating the website and where it would ship from. |

We went to the WB yesterday to pick up some dinner/lunch supplies for our weekend visit. We bought a crab cake, stuffed chicken breast, 2 lbs of steak tips and 2 burritos, at a cost of approximately $70....we asked the attendant if we could please have a small container of sour cream and salsa to accompany the 2 burritos *($10.50 each). He accommodated our request with two tiny containers ($.50 each) after several minutes. We asked why we had to pay for this because if we were at a restaurant it would accompany the burrito. He responded "we are not a restaurant". Needless to say, we will not return. The beef stew we made in the crock pot today was so much better, and more satisfying than having to deal with overpriced food and attitude from the worker at the WB.

I don't get it
I don't quite understand the mentality of some businesses. When the Wining Butcher had the original owners running it and just one or two stores the quality, service and prices were all great. Once they expanded the prices went out of sight and the quality went down hill.
The same thing has happened at Lakeside Roast beef. When it was Dave with one store the quality was super, the prices fair and the service excellent. Now they have 3 restaurants and the prices are sky high with portion sizes much smaller and a staff that doesn't seem to care. I stopped going there because of this, and I know others who feel the same way. It will be interesting to see what happens at both establishments over the winter now that the summer vacation trade is gone and the locals who tend to be more price conscious are the only customers. Will the prices come down to a reasonable spot or will the two places become ghost towns for the winter season? |
Brought angus beef sirloin steak tips from Hannaford in Meredith yesterday. They were on sale for $7.99 a pound. We marinated them and then grilled them. They were great!
