I have built a couple of retaining walls myself. That's a lot different from a free standing "New England style" wall. Buy stone you can handle yourself, which might be "head" size. NE style, field clearing, rocks would be based on stone cleared from a field and probably moved to the edge of a field by a horse drawn sledge. Mostly, this means the rocks were collected and moved to the downhill side of the cleared area. Larger stones first for the base.

If you just want a stone wall, there are plenty of people who do this, but it isn't cheap.
If you take new field stone (e.g. delivered from a quarry) and build your wall, you cam "age" it.
Gather Sphagnum moss, mix it in a blender with buttermilk to a brushable consistency and paint the wall. Moisten, spray the wall daily for 3-4 weeks. Next year, the rocks should be gray, moss covered like they've been there for years. If it doesn't work (too much sun?) your wall will have aged a year, and you probably won't notice the color.

For a premium, you can buy "natural" aged moss covered stone. $$$$.

What is "Sphagnum moss" ?

Peat moss, but still alive and growing. Google says you can buy it at Walmart or Home Depot, but in most of New England, you have some in your back yard.
