Having been born and raised in Central New Hampshire and being served food from my grandmothers that had lived in New Hampshire and Vermont since the early 1900's. I would have to say that is the first time I have ever heard of "Pot Pie" of any kind being served without a top crust.

I believe you were served what some folks refer to as "#$%^ on a shingle" with biscuits instead of bread. In my family it is customary to make this with the left over chicken or turkey, vegi's and a flower based gravy with seasoning. My mother enjoys this meal as I make it the same way that her grandmother used to make it. It is the number one thing I look forward to after a big turkey or chicken roast, besides a nap.
