If sushi can't sell at The Weirs, we ain't gonna be findin' geoduck clams at Hannafords anytime soon. And, uh, I guess you know what these things look like...Right? And they can get 4' long and live 170 years.
Best way to cook a geoduck?...Remove the meat from the shell. Boil for 30seconds, just enough to loosen the skin for removal. Slice very thin. Dip in soy sauce mixed with jalapenos, Thai fish sauce (Nam Pla) and fresh ginger. So it's fundamentally raw...sashimi style. It can also be sauteed, but I don't prefer it that way. Chop sticks are also mandatory!
