I spent quite a few evenings in Madrid several years back partaking of the food in Tapas restaurants. Being from New England and used to eating before 8 pm, it was hard for me to last until dinner at 11 pm. It was even harder to get to work at 8 am after being in a cafe until 3 am!!!!

BTW, the food was always excellent! It helped to have hosts that knew the area as well.
