There was a local (Lakes Region) guy who tried this a few years ago. It actually grew into a small chain called "The Road Kill Cafe". Their pledge to the customers: "If You Can Identify It...It's Free."

I have personally seen one in Rangely, ME, and Newport, RI. NB
