I remember when I learned a million years ago we pushed a chair around the ice. I don't think that is the preferred method any longer.
I agree with your assessment of double runner skates. Elbow and knee pads. More importantly, pick your time for when your kids are most receptive to adversity (read that as not when they are tired or in a bad mood!)
