Default El Centenario is Fab

MM: I have won ribbons for my salsa, BBQ sauce, etc., one day we were at El Centenario (couple years ago) and the owner and I were chatting. I asked him what he thought was most important element of salsa - he said, well what do you think. I said I thought it was using lots of fresh cilantro. He replied that the secret is to cook it. Put into pot, bring to boil, back off to simmer for 10 minutes and let cool/chill. I thought he was daft ... but tried it and it turns out that he was right! It smoothes out the flavor. El Centenario's food is really, really good. And the owners are very nice folks.
