A little background on myself PG. My family owned a meat processing plant here for 30 years and I purchased meat for 15.
Its definately choice PG.I don't know why you would want to pay double price for prime ribeyes. The ribeye is a higher fat content cut of steak and is the reason I buy them. The flavor is always in the fat and the ribeye has more marbling than the rest. Prime cut for the most part means it has more marbling than choice. Age plays some part as the best flavors and texture are from cows 18-24 months in age. My point is the ribeye has plenty of marbling in the choice grade for me at half the price. For me its like paying twice the price for supreme gasoline, a little advantage but....you get the idea. If thats what you want and like then go for it.
