I grew up down the street from the inn. I remember it well. The inn had several owners and there have been good and not so good food served.
As stated on Master Chef on the Food channael, Beef Wellington along with risotto and NE clam chowder are the most diificult food to prepare consistently. Very few establishments carry these products.
As for clam chowder, I have yet to find a perfect clam chowder served in a commercial kitchen. Some of the best clam chowders were from fishermen homes along the coast of Maine and NH.
Same with rsotto, the master chef says you cannot make a perfect risotto by steaming and or boiling. It must be saute in a skiilet. Very few people can do that.
