Staphylococcal food poisoning is caused by a toxin ( or poison) produced by the bacteria growing in poorly maintained food such as potato salad sitting in the sun for hours. Because the symptoms are caused by the toxin and not by an infection, the symptoms may occur as soon as 30 minutes after ingestion.
Most other forms of food poisoning are caused by an infection, viral or bacterial, and take much longer to produce "illness."
