There is an awesome creperie in Wolfeboro, Seven Suns that offers GF:

I tried the Mount Major ham, brie and asparagus crepe and it was amazing.

Patrick's in Gilford has a small GF menu, Lakeside Deli and Grille in Meredith offers GF bread (or at least they did last summer), Guiseppe's in Meredith offers GF pizza and pasta (GF pizza crust is one of the best I've tried).
