My friend said her gluten requirements definitely require a restaurant that knows what it's doing—cross contamination through surfaces, cooking pans, and even through the air can affect her. In fact, she had to change out her Teflon cooking gear because gluten can get caught in the cracks of the treated surfaces. She can only use stainless steel for this reason.
We visited The Bob House again last night and, again, the waitress, cooks, etc. were on top of things—even bringing her pizza out on a separately marked plate.
I didn't know this level of need existed, but it appears some restaurants are getting ahead of it—the Red Heat Tavern, in fact, takes allergy orders on purple forms, has different prep locations and materials, and serves all gluten free meals on red plates to identify them.
