I'm sure that if you talked to Waldo & Pepper, it is not just the wages. As we all get older, there are thoughts towards our later years...retirement, health insurance, disability insurance; which are things that as a business owner we are not necessarily able to afford.

It is not just enough to live and make a living...you have to plan for your future, and it would appear that that is what they are doing, while still maintaining the restaurant.
