Does any know if there is anyone around the Lake that gives airboat rides in the Winter?

Both ISS

and Diversified
http://divermarine.com/

have airboats. Don't know if they offer rides to the public.

They are very rough on the back, unless there is a layer of snow over the ice.
Trust me from experience, they are no fun to ride in over bare ice. Very cool being out on the lake in the winter though, mine turned some heads going through the weirs channel in February.
