I have a Highfield CL360 for my kids and I'm looking for a small, inexpensive boat trailer. Something under $500 in good condition. The boat is 11' 10" .

I would just keep an eye on Facebook Marketplace or Craigslist. You should be able to find one for $500 easily.
If you're selectively cheap—as I am—you might look for a "free" or cheap boat you can give away or get rid of. I ended up paying $200 for a 12' Alumacraft with trailer last year and was gonna recycle the boat—literally throw it in my town's scrap metal bin—but it turned out to be a fine vessel, so it's now on a storage platform waiting for my daughter to come of age or as a backup for my son's.
