Can you customize a Jet Ski for a handicap person?

There are Youtube videos showing a person(s) getting transferred from a wheelchair to a Jet Ski.
Good for them, that is great.

What if you can not use your hands. You can still drive a car, can you navigate a boat or a Jet Ski.
