That time of year can be tough. Don't always have snow that early. Best bets would be Pittsburg or for day trip or over night watch the Bear Notch area. There is place up there, northern extremes I believe, that does sled rentals also.

Saw that place this past weekend, but conditions weren't great--would February be more reliable, and is Pittsburgh the best place to be looking?

I only suggested Bear Notch because it was close and often holds snow earlier in the season before other places do. Maybe a good spot to get the families "feet wet" snowmobiling and see if they like it. Some years Pittsburg also has good snow some years it takes a bit after XMAS to get going. Often Pittsburg trails can be open in December but its also common for only the northern portion of them to be open and not the trails down in town. When that occurs it requires trailering machines up to Magalloway for example. Reading your post it seems as though you don't own sleds. Im not sure if there are places in Pittsburg that you could rent sleds and have them trailer to higher ground. I know places like Lopstick rent sleds if you happen to stay there.
