I am not sure that the GF-by-choice folks have helped or hindered the cause of serious food allergies, but there seems to be a lot more of the "alert your server" notations, which is a Good Thing.

As a person with a weirder food allergy that would cheerfully spend $$$ for an allergy-free meal, I would urge restaurant owners to teach waitstaff to ask a chef or supervisor if the offending/lethal ingredient is there
In layman terms I was told that the glutens sugars and red meat create an environment within my red blood cells that the parasite thrives in. Removing them from my diet will lead to a weaker parasite and help the medicine be more effective.

I'll bet your food allergy is not as weird as you think. Being at the helm of a restaurant that caters to allergenic needs has opened my eyes to how many there are.

And that is the key! Countless of millions of folks have food restrictions. I am diabetic. I pretty much stop going out and eat home. If I need to be on the road I pack a smoothie or bring staples for me to snack. I save a lot of money in the process, but really miss out on exploring new dishes.

Talked to a number of restaurant owners who found out they were celiac or diabetic later in life, like me stop eating out. They admit sales are down because of allergies, but the general public crave for tasty food! (salt, sugar, gluten, fat etc.) They don't want to lose any more sales!
