FYI...Their marinated tips and chicken are done in a vacuum tumbler. You load the chamber with meat and marinade, vacuum pump ALL the air from the chamber (makes the meat expand and opens the grain)...

Great Stuff!
I've been a regular at the Wine'ing Butcher, nothing but good stuff from there. The tips, chicken and steaks are great, but I want to tell you try smoking some of their marinated ribs...awesome!
