Coming from the hotdog king, I would hope he is not baking them. As a matter of fact, I've never heard of baking hotdogs. Most carts are set up to at least have the hotdogs in hot water. Natural casing dogs are the only way to go and if they are brought to the proper temp they will have a great snap to them. Trust me as I've made millions of them.
