1 Bay leave
2 cans of diced tomatoes with cilantro and lime juice
1 can of diced tomatoes with chilies
1 can of red beans (drained and rinse)
1 can of black beans (drained and rinse)
¼ cup of boot strap rum.
In a stock pot, Cook meat to 160 degrees
Add and Sautee all raw vegetable and spices with a teaspoon of olive oil until soft.
Add rum then add the canned ingredients. Bring to a boil and let simmer for 20 minutes.
Serve with tortilla chips and garnished with cheese. Add smoked tabasco sauce to taste.
Note: If you prefer spicy hot chili, replace 1 can of diced tomatoes with cilantro and lime juice with 1 can of diced tomato with chilies.
