"Sunday Morning Coming Down" by Johnny Cash"?
"The Weight" by The Band
"Summer" by John Denver (Anything by him actually)

Here's a couple of recent tunes that I think are excellent Summer tunes.

"Windows are Rolled Down" by Amos Lee
"Stay a Little Longer" by Brothers Osborne
