I'd rather frequent a restaurant that orders as close as they can to daily usage rather than one who over orders so they never run out and don't serve fresh menu items.

Sometimes that means you run out of things - it happens. If the market dictated otherwise I'm sure you would see changes in how things are run but there are enough folks who value the restaurants that periodically run out of things so they don't lack for business.

Not a slam on anyone, just shows people value different things and that's great.
