Question: when was this area called Greystone NH?

Greystone was a whistlestop on the Lakeshore Railroad. (see other thread) When the railroad was abandoned there was probably little reason to have a specific designation for this area.

The Glen Gables was still there in the late 1950's when we first vacationed at Sandy Point. It is indeed the location of the former William Tell Restaurant, now The Lodge at Smith Point.

I don't know when the Greystone In was orignally built, but I do know that it was there in the forties and fifties. We always passed it on our way to Lake Shore Park.
The William Tell was up the hill from the Wise Owl at the curve in the road on route 11, not near the lake. Was it originally further up the road towards Alton Bay before that? The Glen Gables was close to the water near Sandy Point.
