This is what I don't like about BBQ restaurants, burnt ends have become a marketed menu item, anything and everything is made into "burnt ends". True burnt ends come from the fatty end point of a brisket during the smoking process, but most restaurants are serving you something else because the likelihood of them having enough burnt ends to offer up as a separate menu item fall short, so they use other meats and call it "burnt ends".

Kind of like Pizza's and Flatbreads, Flatbreads just being a smaller, differently shape pizza that you pay more for!
