We're staying in Gilmanton/Alton area for the week, and would like to do some tuna steaks on the Big Green Egg.
Can anyone recommend a place in the area to get sushi grade tuna (like a McKinnon's type seafood/butcher shop)? Thanks, Jason (JG1222) |

You could call "THE WINE'ING BUTCHER" Gilford location or their Meredith location. Not sure if they do fish but that's a good place to start IMO

You can also try Moulton farm (between Meredithand Center Harbor) as they have some very select seafood.

There are no regulations specifying "sushi grade " so you really are dependent on the fish seller for the high quality of the fish. I am only commenting as any fish seller can say it is "sushi grade" so buyer needs to beware and be knowledgable.

I get great frozen tuna steaks at Shaw's in Gilford. Sushi grade, great cut.

Side question. Does the BGE get hot enough to put a good sear on the tuna?
I tried the alton brown method of using a grate over a charcoal chimney starter and it work great, if you like it that way. It gets rocket hot |

You absolutely have to get it from Sal and Janice at Moulton Farm. Sal's tuna is sushi grade and you can eat it raw if you so desire. His fish and seafood are by far the best in the Lakes Region. I have been purchasing from him for years and have never ever been disappointed. You will get hooked.
